Sabbatical Cognac Cask Finished Whiskey

Sabbatical is about discovery, exploration, and new adventures. We have spent years developing our signature blend of seven whiskeys, layered together to build a uniquely smooth yet complex spirit. This delicate art of blending small batches over time is a practice shared with the rich tradition of fine cognac makers in France, For this limited release bottling, we picked two barrels of blended whiskey from our Solera evolutionary aging program for further maturation in a freshly-harvested cognac cask. Continued marrying, slow proofing, and gentle interaction with French and American oak barrels have produced an unforgettable cask-finished blend with remarkable depth and smoothness.
