Our 4-year-old straight rye whiskey spent an additional 2.5 years in a 66 gallon Palo Cortado Sherry hogshead cask. The resulting spirit features warm cinnamon, notes of balsamic, and a distinct nuttiness. The classic spice profile of our signature whiskey balances with the complexity of caramelized wood and dried fruits left from the Palo Cortado casks.
